What’s for Dinner

 Ben is a pescatarian now you guys. This is fine with me— I am not a huge meat fan and only eat chicken because I can’t think of anything else for protein in salad besides cheese since eggs hurt my stomach (and so do avocados, olive oil, and some nuts).

Soooo, we are both getting more creative with our menu plans.

This week:

  • Salmon burgers, corn, watermelon, slaw (yes, we sure did have this last week, and it was DELICIOUS)
  • Grilled cod (?? Giant slab of frozen fillets from Costco), roasted potatoes, giant salad, snap peas
  • Bean and sweet potato enchiladas, chips, salsa, guacamole, etc.
  • Costco pizza
  • Rotisserie chicken Caesar wraps (Ben is gone)
  • Salmon/quinoa bowls
  • SOMETHING WITH LENTILS.

    This is Lisa. We had lentil soup this weekend - it’s a vegetarian recipe but we add chicken sausage to it to add some protein. I also made a curry dish last night with ground lamb… I was surprised when Phil brought ground lamb home from the store. Usually we would discuss trying new things. I was skeptical about liking it but gave it a try, took one bite, and dumped it in the compost bag… we have liked lamb recipes at Indian restaurants but there are things you just let the experts do and anything with lamb falls under that category (apologies to all the vegetarians and vegans reading this). Phil likes the dish ok so he will be eating allll the leftovers. Besides that disastrous dish, we will have stuffed peppers. If you guys have an Aldi close by, I highly recommend their ahi tuna steaks from the freezer section. I marinate them in a tamari (GF soy sauce) marinade and then we sear them on the grill and it’s very good.

  2. I love salmon and have it like...twice a year? Meat and fish are always so expensive and I cheap out! But I really should buy salmon more frequently because it is DELISH.
    I love how you add the word "giant" in as well. Cooking for 7 people is no joke so, yes, a giant salad would be needed!!

  3. Sarah, I roast lentils and chickpeas to put in salads, they add a bit of crunch and a lot of protein!

  5. Our current fam favorite is taco salad and I have found that I can make it with ground turkey meat and with all the seasoning no one notices and there are no complaints. I buy rotisserie chicken at Costco when I need something fast and I can't figure it out or when I don't want to/don't have time to cook.
