What We’re Eating This Week

 According to my wipe off fridge menu, I last meal planned on June 16th— a day that I just wrote HARRY’S BDAY.

Soooooo, after 2 months off, I am making a sputtering return.


Here’s what we’re eating this week:

Sunday: salmon, green beans, salad

Monday: breakfast for dinner

Tuesday: pizza and volleyball (Bradley women are playing UW women in a pre-season exhibition game)

Wednesday: Shrimp pasta with spinach, tomatoes, etc; French bread, salad

Thursday: Shrimp or buffalo cauliflower tacos, chips and salsa

Friday: Grilled cheese with leftover French bread and that Costco garlic spread I am obsessed with, chips, veggies, dips, etc.


We are EASING IN to a more scheduled life, friends.

  1. That is one tall soft serve cone Dorothy is enjoying. Oh, how I love soft serve. Your plan looks manageable and well-thought out, ie: using the leftover garlic bread for grilled cheese. You've got this.

    I just walked to the yard where Coach is weeding to ask him if he wanted to grill tonight. (yes he does, hooray) We are in an all-hands-on-deck situation over here as I'm starting up with my daycare on Tuesday. I'm planning a pork loin barbeque deal in the crockpot tomorrow (so easy and everyone loves it, can be shredded and put on sandwiches) and I have a whole pan and a half left of pizza casserole that I can serve later in the week, cuz I made 3 trays and sent some with Tank back to school and gave another big pile of it to my folks to get them through the weekend.

  2. Now I want ice cream, but we don't have any and I'm not going out. YUM. I went to the Farmers' Market today and got corn and green beans and tomatoes and this amazing pesto with all of the usual ingredients but also pistachios and cashews. So I'm not sure where we're going with meals this week, but I know it will include those things.

  3. Meal planning! Woooooo....
    I have been making exclusively bowls/ salads for the entire past month, and now I think it's almost time, with cooling temperatures, to actually start cooking again, and using the stove for more than just cooking up the base of the salad (pasta, quinoa, noodle, etc.) That said, I have a rogue basil plant that is three feet tall so I think I'll make a pesto pasta salad tonight, and maybe air fry one of my five-pound zucchinis to go with it.

  4. Easing in -- YES. That's the only way to do it. Except that I fear we are not easing in but have been ignoring the onset of School Schedule and re-entry is going to be awful.

    The superman (or playdough) ice cream in the last photo. I love it so much haha It's kind of disgusting but I once had a professional carpet cleaner scrub my carpets. The stuff he extracted looked just like Superman ice cream so I literally went and bought some as soon as he was done...Yeah I know, pretty gross. But anyway, best of luck with the meal plan!

  7. I have foregone easing in in favour of a screaming plunge - who doesn't love going to bed at two-thirty and getting up at seven for work? I know I do. But I do have plans to try and cook/meal plan appropriately for the two of us (or one of me) this fall rather than the ridiculous pitiful way I handled last fall.
